Avocado tuna salad

  • 1 can of Solid White Albacore Tuna
  • 1/2 cup of Pico de Gallo
  • 2-2 tsp of Mayo
  • 1 avocado
  • Salad Mix
  • Italian spice mix
  • Balsamic dressing

Italian Sausage with Homemade Sauce and Zoodles


Italian pepper flake sausage with homemade sauce and zoodles. I made my own low carb spaghetti sauce by winging it, and it was better than store bought!

  • 1/4 onion
  • Some chopped garlic
  • 1 Roma tomato chopped
  • Some chopped basil
  • Oregano
  • Italian Seasoning
  • Fresh ground pepper
  • 1 Small can of tomato sauce

Saute the onion and garlic in the pot with some EVO until tender. Add everything else and simmer while cooking the rest of the dinner.

Supreme Pizza Frittata

  • 6 eggs
  • 1 cup chopped green peppers
  • 1 cup chopped onion
  • Few (or a lot) cloves of garlic
  • 1 bag of shredded mozzarella
  • 1 bag of pepperoni (chopped)
  • 3 roma tomatoes, sliced
  • 1 sm can of sliced black olives
  • 1 sm can of mushrooms
  • Italian Seasoning

Set oven at 400°. Scramble eggs, put aside. Saute the peppers, garlic and onions in extra virgin olive oil in the cast iron pan on medium high heat. When the onions are transparent, remove everything into a bowl. Spread cheese on the bottom so it covers, let melt a bit and put back veggies. Add pepperoni and seasoning. Add eggs. Let settle. Add tomato slices and a few more green peppers slices. Add more cheese, olives, and mushrooms. More seasoning.  Put in oven for 8-14 minutes or until egg is set in center.pizza_frit-CU

Shrimp Scampi with Spaghetti Squash

Scampi Cooking Shrimp Scampi with Spaghetti Squash

  • 3 tbsp of unsalted butter
  • 2 tbsp of extra virgin olive oil
  • a few (or a lot) cloves of garlic, slivered
  • 1 tbsp of red pepper flakes
  • 1/4 cup of white wine
  • 1 lb of shrimp
  • some Italian parsley, chopped
  • lemon juice and crushed black pepper to taste
  • 1 spaghetti squash, cooked and shredded

Sautéed Garlic and Kale

Heat some extra virgin olive oil, drop in the kale and several chopped garlic. Sauté until the garlic browns slightly and the kale is soft.
